Savory Cauliflower Bites: Quick & Easy!

Craving a savory snack? Instead of reaching for the potato chips or cheese and crackers, give these a try! They are surprisingly tasty and satisfying, minus the guilt :)

A couple months ago I ordered the buffalo fried cauliflower at California Pizza Kitchen as an appetizer, and LOVED them, but... found myself wishing they weren't breaded and fried. I made a mental note to try making my own {healthy} version, and finally got around to it! These have no breading. They're just baked in a little olive oil, and aren't buffalo-style either, but you could easily make them that way with a little buffalo sauce if you're in the mood for something spicy!

It's SO easy. Here's how I did it...


  • 1 head of cauliflower 
  • A couple drizzles of olive oil
  • Spices! You can use whatever you have. I used salt, pepper, and a cajun spice mix.


1. Preheat the oven to 400 deg. F

2. Drizzle some olive oil on a baking sheet & spread around (I used a paper towel).

3. Cut cauliflower into little slivers about 1/2" thick. The easiest way to do this is to cut the bottom stem so that you can break the head apart into it's individual branches, and then slice them from the bottom as best you can. Don't worry too much about consistency with the thickness! Also lots of crumbles will fall off- so just set those aside. I have a plan for them later :) You can place the slices onto the baking sheet in a single layer, as pictured below!


4. Now, drizzle and/ or rub some more olive oil on top of the cauliflower slices, sparingly (because this is supposed to be healthy- remember?).

5. Sprinkle your spices on top as desired & pop it into the oven for about 10 minutes.

6. Next, take the baking sheet out of the oven, and flip over each cauliflower slice. Sprinkle the same spices onto the other side and put them back into the oven for at least 10 more minutes. 

7. Keep an eye on them. Depending on how thick you cut them, and how well-done you want them to be, it could take a longer or shorter amount of time! You'll know they're ready when they start to look golden brown. I like mine to be borderline burnt so I kept them in there a bit longer than that, and it was delicious!! 

8. Now for those crumbs... No need to waste them- they may not be as pretty, but they're just as tasty. You can olive oil- down another (or the same) baking sheet, spread them out on the sheet, and add spices as desired. Pop those into the oven for a few minutes, take them out and push them around a bit to mix and flip. Be careful- these cook way faster! Let them cook another minute or two if needed, and now you have the perfect salad topper! Or if you're like me, you can just eat it by the spoonful when no one's looking.

It was super easy & quick to make... and I ate them all almost as fast... I think next time I'll try making even more- maybe two heads of cauliflower? That way there would be the slight chance of leftovers ;)
